LYL: lime honey beet salad

No beets will be had in this house, I am sorry to say. I am anxious to hear what you all thought though!

    Dorie’s elegant recipes are fun, but I have a soft spot for her quick, healthy ones. This is not the kind of recipe which you rave about to your friends and family, but it is the kind which you make again and again when you just need to get dinner on the table.

    If you can find chiogga beets, they are sweeter than most others…and so darn cute w/those stripes!

    So happy this recipe came up this week. I’m trying to eat more produce — this is a very nice beet salad. Dill was a total surprise. Left out the chives cuz I forgot to buy them.
