I had to try a couple of times, too, just because I was afraid of breaking down those egg whites too much! I wasn’t sure why my chocolate seized up both times. The first time I thought it was because my egg yolks weren’t room temperature, but it happened with room temperature eggs, too. Oh well … it was definitely tasty.
