Béatrix’s Red Kuri Soup (78) – because I finally laid my hands on a Kuri squash and I am hoarding it to make this recipe (this is Cher’s commercial for the month)

Chopped Liver (32) – might as well get it out of the way

    Crab-avocado “Ravioli” (185)

Roasted Jerusalem Artichokes with Garlic (353)

I’m with Cher – I finally got my hands on a red kuri squash too and I can’t imagine making anything with it but this soup!

The red kuri soup is so good – sooooooo good. I made it twice last year because I found the squash at the farmer’s market. Everyone should make it – it’s amazing!
