So wonderful- yay weeknight dinners !! (aka- it’s not just for Thanksgiving anymore….)
Not traditional, but I served mine with sweet potato and stir-fried veg:
We used Chicken Breasts & Syrah – a wonderful entree!

The Dude was a huge fan of the stuffing…er…dressing.
My Cornish Hens were definitely raised on steroids…but tasty. I’ve worked all winter on updating my site and have been a Nervous Nelly this week. I hope, hope, hope you all like it.

I liked it very much but I could not find cornish hens! So I stuffed a chicken :)
I made these last week, posted early on Thursday evening, and neglected to post here when the link was live because I was way too busy enjoying watching my boy in college baseball, dining with our friends in Portland, and “celebrating” St. Paddy’s day with my brother who was in town today! I love my family!!
