Hi! I posted early this week because I’m having surgery tomorrow. Don’t worry. It’s only minor, but I won’t be in any condition to post for the next couple of days.

… still I got some nice little cakettes and they made a nice birthday cake for myself!

I have made 2 already.. and try making it with almond extract instead of the vanilla – yum!

  13. KY October 28, 2010 at 10:43 PM #

I agree with josefa, the rum made the difference in this cake. I made it twice too!

I took this apple cake to the office and they were my tasters…and, they ate the whole cake! Loved it! So…I’ll be making it again soon for the home crew. Easy, delicious, and the baking aroma that filled my house was…..Heaven!

  33. Boneats October 29, 2010 at 8:33 AM #

I loved this cake, as did my co-workers. So easy, and I love how it’s chock-full of apples!

  34. Waverly @ peaceandloveinthekitchen.com October 29, 2010 at 8:37 AM #

We love apple cake in this house. More apples than cake, we loved the light sweet taste of Marie Helene’s apple cake. As per Dorie’s suggestion, I used different apples: Granny Smith, Harrelson, Honey Crisp, and Fuji. With so few ingredients, I could taste the apples, the cake, and the hint of vanilla and rum to flavor it all. The cake was all gone in just a few days. We loved it.
Here is the link. I have posted a “wrap up” of October’s recipes to my blog. The apple cake is at the bottom. http://www.peaceandloveinthekitchen.com/2010/10/french-fridays-with-dorie-october-in-photos

  35. KWAB October 29, 2010 at 8:40 AM #

This was very tasty…I almost didn’t make it because it is sweet, but I’m so glad that I did.

  36. gingerbreadbagels October 29, 2010 at 8:41 AM #

The cake was incredibly easy to make and my favorite parts were the rum and apples! I made the cake twice but added some spices, more vanilla, more rum(!!) to the second one. I also made some rum whipped cream to go along with the cake. YUM!

  37. SisBoom October 29, 2010 at 8:42 AM #

Fantastic cake but did anyone else have trouble figuring out how to spell “Marie-Hélène”?

  48. thisfoodismyjam October 29, 2010 at 10:37 AM #

I used a little bourbon instead of rum. Not sure how well bourbon replaces rum, but it was pretty tasty!

  49. Candy October 29, 2010 at 10:47 AM #

what a nice, simple cake! loved the apples, butter, vanilla, rum… a beautiful combination of flavors!

  50. Serene October 29, 2010 at 10:55 AM #

This is my favorite since the gougeres:

  51. salsa verde October 29, 2010 at 11:01 AM #

J pronounced this dessert as “the best cake I’ve ever eaten!” Rich with butter and chunks of local Cortland apples, this sublime dessert was simple and delectable. We went back for seconds and finished off the rest the following morning. This cake deserves a round of applause!

I may replace some of the all-purpose flour with a smidge of white whole wheat flour. I’ll report back…

  52. franklyentertaining October 29, 2010 at 11:04 AM #

    Marie-Helene’s Cake at Frankly Entertaining

I had a larger spring form pan than the recipe called for, so I decided to increase the ingredients by half. I kept the same baking time and it worked out great.

I also decided to use lemon juice instead of the rum, which I am sure changes the flavor significantly. But we all loved it and everyone is looking forward to me making it again!

  53. Lexi October 29, 2010 at 11:21 AM #

I decided to gild this lily by sprinkling on some turbinado sugar and hitting it with a kitchen torch. So, so good.

  54. saffronandhoney October 29, 2010 at 11:45 AM #

Here’s the apple cake – so easy & delicious! Smells like October too, I think:) so a good one to finish out the month.

So many Apple Cakes, I love it! :)

My post is a recap of Dorie’s visit to Dallas and this yummy little cake!

  57. evilcakelady October 29, 2010 at 12:51 PM #

This cake was easy and delicious! And, I met Dorie!

  58. Deborah Balint October 29, 2010 at 12:59 PM #

This cake is perfect for last minute guests as I usually have all these ingredients in my pantry. The flavor actually reminded me of my apple pancakes that I make! I love how you can keep it simple or dress it up with different toppings. I used Fuji, Gala. Golden Delicious, and Granny Smith Apples in mine and topped it with fresh whipped cream and a sprinkle of cinnamon sugar.

    Here’s my photo:

  59. marocmama October 29, 2010 at 2:36 PM #

This was a fantastic recipe! I’m so glad I found this group and cookbook. I am enjoying it already! My husband has eaten half the cake and I just made it last night!

  60. SewTrashy October 29, 2010 at 3:03 PM #

Not thrilled with the outcome although the flavors are nice. Too wet and bread pudding-y for my taste. Too many apples maybe? I even baked it 30 extra minutes.

I’m thinking I’ll throw slices into a hot skillet in the morning for a nice Saturday breakfast.

    • gigi October 29, 2010 at 9:47 PM #

Mine was very moist as well, and I baked it longer too.

  61. AC October 29, 2010 at 3:40 PM #

Apple cake, apple cake, apple cake!!!!!! yum!

  62. Kat October 29, 2010 at 3:42 PM #

Oh, this was a great recipe to try!
I used cognac instead of rum, with outstanding results. My house smells sooo good! I was trepidations since there was no cinnamon, or nutmeg, or cloves. I mean really! How can you cook apples without spices? I was wrong.

  63. Katrina October 29, 2010 at 4:49 PM #

For reasons unknown, I felt really witty while I wrote this post. Maybe this cake is just so good it made me bring my A game to the blog post!

  64. Sugary Goodness (Kim) October 29, 2010 at 5:11 PM #

I finally got mine made last night! It was very good with ice cream. I did the 1 1/2 times the recipe but only put in 5 apples

  65. ST October 29, 2010 at 6:00 PM #

This cake tasted great! Looks on the other hand, were so-so due to used error! Next time I will use the correct pan size or increase the recipe as suggested above. I also might use a touch smaller apples.

  66. lemontart October 29, 2010 at 6:06 PM #

My forever apple cake is finally found! Loved this with no spices and that rum elevates it. Yummy breakfast cake too.

  67. Linda@howtocookawolf October 29, 2010 at 6:16 PM #

Oh how we loved this cake…the aroma while it was baking was intoxicating!
Thank you Dorie for another wonderful recipe! A keeper!

  68. betsyp October 29, 2010 at 6:35 PM #

I think I’m in the minority today. The recipe had so much going for it. It was easy to make and both smelled and looked great. I just didn’t love the end result like everyone else did. It happens…

  69. Nicky October 29, 2010 at 6:42 PM #

Oh how I loved this one! Butter, sugar, apples, rum, no fancy or difficult techniques required but oh so very very good!! http://www.moodyfood.net/2010/10/photos-only-fridays-boozy-apple-cake/

  70. tricia October 29, 2010 at 6:43 PM #

Our first week and the blog and we very much enjoyed the cake. We will have to go back to work on the earlier October recipes as well :)

  71. LaurensFault October 29, 2010 at 6:56 PM #

This cake turned out so pretty, I felt a little guilty that it was so simple to make!
I left out the rum, but it was delicious anyway.

And thanks for posting a comment here! It wa so nice to meet her :)

  78. gigi October 29, 2010 at 9:49 PM #

Here is mine! I loved choosing the divers apples, as I am a real apple lover! I found this came out very moist and more like a kugel than what I would consider a cake (perhaps due to the fact that I only had a 9″ springform and doubled the recipe, and then used my 9″ and some individual ramekins). Love the rum!!

  79. Mrs.Bones October 29, 2010 at 9:58 PM #

A little late, but still DELICIOUS.

I would like to offer a BIG smooch to whomever first suggested brown butter. It brought this cake to a totally new level.

Mine broke b/c we were so impatient (and didn’t use a springform) but it was still so tasty, we didn’t care!

  80. Patti October 29, 2010 at 10:36 PM #

Can’t believe I managed to make this tonight!

  81. LaJuana October 29, 2010 at 11:28 PM #

I made mine weeks ago and am barely getting it posted on time! Hate it when Friday’s feel more like Mondays! At least it’s over! At 4 today I learned that Trick or Treating was going on tonight in our county. Glad I wasn’t trying to bake during that fun…

I’m looking forward to trying this with browned butter as some mentioned in the questions section… and reading Mrs. Bones comments about that…can’t try it soon enough! Wonder how many varieties of apples I have in the house…hmmm….

A little late, but here it is nonetheless! I’m not sure I’d categorize this as a cake, but I thought it was good and I’ll probably make it again- next time using apple brandy instead of rum. :)

  87. moowiesqrd October 30, 2010 at 3:02 AM #

Also a tad late… it’s just past midnight here in CA! The cake was awesome. Definitely an easy and great recipe.

  88. mike509 October 30, 2010 at 4:04 AM #

I’m sure it’s still Friday (somewhere in the world).

This cake was out of this world.

  89. 1cup October 30, 2010 at 1:30 PM #

I liked the flavor of this cake–just the right touch of rum–but I found the batter a bit squishy where it pooled at the base. The texture reminded me a bit of bread pudding, rather moist as if soaked instead of the expected cake texture. I really liked the different taste from the different apples. I warmed it to serve and topped it with some homemade caramel sauce.

  90. passionate_cocinera October 30, 2010 at 2:28 PM #

When will you post the final list for the November recipes?

  91. stephsbitebybite October 30, 2010 at 2:29 PM #

  92. vicki October 31, 2010 at 7:24 AM #

I baked it Friday night. Saturday morning it was delicious. That bit of resting really allows the flavors to mellow and accentuate.

  93. Glennis-CBWA October 31, 2010 at 4:48 PM #

I finally got it put together late Saturday night…unfortunately (or fortunately?) we fell asleep before it cooled enough to eat…but it was lovely with brunch the next morning!

  94. QuaifeQ October 31, 2010 at 5:13 PM #

Super easy and super delicious. Maybe I should substitute this for Apple Pie on Thanksgiving???

  95. rainydaykitchen October 31, 2010 at 7:20 PM #

  96. DebsLunch October 31, 2010 at 8:23 PM #

Like many others, it’s better late than never for me, too. I *made* the cake Friday, 2 of them, but I didn’t write it up till now.

  97. BKL October 31, 2010 at 8:25 PM #

Baked this on Saturday night, and took some photos to post today. For me this was the most successful recipe so far.

  103. luciacara November 7, 2010 at 9:08 AM #

I was out of town so am very late posting – now I am over a week behind. Anyway, I had a 9 1/2″ pan so increased the recipe by 50% and would not want it any smaller :) Very good cake and I liked that it was not as sweet as most cakes.

  104. Pam November 12, 2010 at 5:58 AM #

Better late than never!! I loved this cake. It was more like a bread pudding, which I love!

Another recipe from the past completed! I made this cake today for a dessert potluck, and people really liked it. Yum!
