Hi! I posted early this week because I’m having surgery tomorrow. Don’t worry. It’s only minor, but I won’t be in any condition to post for the next couple of days.

Gosh this was the most gorgeous cake , i topped it with crumble , added cinnamon, spice and all things nice to one part of the batter and forgot to add the ground coconut :-(
Dorie, u recipe rock and are absolutely fool proof, i love this one whether topped with a pear or a blueberry sauce!!
Had step by step pics[again] so took me awhile to upload ,so worth the deliciousness!!
And honestly why ever did i halve the recipe [am eating so oo muc]
And then there is this funny incident i added ,i asked somebody to get me 4 different kinds of apples and she brought me pears too [i already had them home,lol]
I was thinking of trying this with pears! :)

I made the cake for dessert and then used the leftovers for dinner the next day, paired with a pork chop and some Vintage Cheddar Bechamel sauce and it was fantastic!!!!
The rum is the kicker in this one!
I have made 2 already.. and try making it with almond extract instead of the vanilla – yum!

I took this apple cake to the office and they were my tasters…and, they ate the whole cake! Loved it! So…I’ll be making it again soon for the home crew. Easy, delicious, and the baking aroma that filled my house was…..Heaven!
We absolutely loved this. My favourite so far! I couldn’t use my stove so cooked it in my convection oven and it turned out lovely!

This might be my favorite Dorie recipe ever…but then, I always say that, until the next one.
I loved this cake, as did my co-workers. So easy, and I love how it’s chock-full of apples!
We love apple cake in this house. More apples than cake, we loved the light sweet taste of Marie Helene’s apple cake. As per Dorie’s suggestion, I used different apples: Granny Smith, Harrelson, Honey Crisp, and Fuji. With so few ingredients, I could taste the apples, the cake, and the hint of vanilla and rum to flavor it all. The cake was all gone in just a few days. We loved it.

This was very tasty…I almost didn’t make it because it is sweet, but I’m so glad that I did.
The cake was incredibly easy to make and my favorite parts were the rum and apples! I made the cake twice but added some spices, more vanilla, more rum(!!) to the second one. I also made some rum whipped cream to go along with the cake. YUM!
Fantastic cake but did anyone else have trouble figuring out how to spell “Marie-Hélène”?

I used a little bourbon instead of rum. Not sure how well bourbon replaces rum, but it was pretty tasty!

what a nice, simple cake! loved the apples, butter, vanilla, rum… a beautiful combination of flavors!
This is my favorite since the gougeres:
J pronounced this dessert as “the best cake I’ve ever eaten!” Rich with butter and chunks of local Cortland apples, this sublime dessert was simple and delectable. We went back for seconds and finished off the rest the following morning. This cake deserves a round of applause!
I may replace some of the all-purpose flour with a smidge of white whole wheat flour. I’ll report back…
Marie-Helene’s Cake at Frankly Entertaining
I had a larger spring form pan than the recipe called for, so I decided to increase the ingredients by half. I kept the same baking time and it worked out great.
I also decided to use lemon juice instead of the rum, which I am sure changes the flavor significantly. But we all loved it and everyone is looking forward to me making it again!
I decided to gild this lily by sprinkling on some turbinado sugar and hitting it with a kitchen torch. So, so good.
Here’s the apple cake – so easy & delicious! Smells like October too, I think:) so a good one to finish out the month.

This cake was easy and delicious! And, I met Dorie!
This cake is perfect for last minute guests as I usually have all these ingredients in my pantry. The flavor actually reminded me of my apple pancakes that I make! I love how you can keep it simple or dress it up with different toppings. I used Fuji, Gala. Golden Delicious, and Granny Smith Apples in mine and topped it with fresh whipped cream and a sprinkle of cinnamon sugar.

This was a fantastic recipe! I’m so glad I found this group and cookbook. I am enjoying it already! My husband has eaten half the cake and I just made it last night!
Not thrilled with the outcome although the flavors are nice. Too wet and bread pudding-y for my taste. Too many apples maybe? I even baked it 30 extra minutes.
I’m thinking I’ll throw slices into a hot skillet in the morning for a nice Saturday breakfast.
Mine was very moist as well, and I baked it longer too.

I used cognac instead of rum, with outstanding results. My house smells sooo good! I was trepidations since there was no cinnamon, or nutmeg, or cloves. I mean really! How can you cook apples without spices? I was wrong.

I finally got mine made last night! It was very good with ice cream. I did the 1 1/2 times the recipe but only put in 5 apples
This cake tasted great! Looks on the other hand, were so-so due to used error! Next time I will use the correct pan size or increase the recipe as suggested above. I also might use a touch smaller apples.
My forever apple cake is finally found! Loved this with no spices and that rum elevates it. Yummy breakfast cake too.

I think I’m in the minority today. The recipe had so much going for it. It was easy to make and both smelled and looked great. I just didn’t love the end result like everyone else did. It happens…

Here is mine! I loved choosing the divers apples, as I am a real apple lover! I found this came out very moist and more like a kugel than what I would consider a cake (perhaps due to the fact that I only had a 9″ springform and doubled the recipe, and then used my 9″ and some individual ramekins). Love the rum!!
A little late, but still DELICIOUS.
I would like to offer a BIG smooch to whomever first suggested brown butter. It brought this cake to a totally new level.
Mine broke b/c we were so impatient (and didn’t use a springform) but it was still so tasty, we didn’t care!

A little late, but here it is nonetheless! I’m not sure I’d categorize this as a cake, but I thought it was good and I’ll probably make it again- next time using apple brandy instead of rum. :)

I liked the flavor of this cake–just the right touch of rum–but I found the batter a bit squishy where it pooled at the base. The texture reminded me a bit of bread pudding, rather moist as if soaked instead of the expected cake texture. I really liked the different taste from the different apples. I warmed it to serve and topped it with some homemade caramel sauce.

I finally got it put together late Saturday night…unfortunately (or fortunately?) we fell asleep before it cooled enough to eat…but it was lovely with brunch the next morning!

I was out of town so am very late posting – now I am over a week behind. Anyway, I had a 9 1/2″ pan so increased the recipe by 50% and would not want it any smaller :) Very good cake and I liked that it was not as sweet as most cakes.
