I made roast chicken as well. Finally a juicy roast chicken that I do not need to seperate the skin from breast meat and massage it with herb butter. Chicken was quite tasty but can’t say the same about the bread.

The chicken was easy, juicy, and turned out to be a very special dish…one that I will re-create again this weekend for our house guests. It was Roast Chicken for Les Paresseux for me! It was truly delicious. Yes I had a black bottomed pan but that certainly did not mean disaster! The chicken was moist and flavorful. This is a keeper recipe and goes on the rotation!

I baked my chicken roast twice , its so good that i still have to make it again, tried 2 different methods and paired it with the gratin the first time and Pumpkin flan the second , both rocked!!

I made the potato gratin this week. I added a sprig of rosemary in the garlic-infused cream and then I topped it with pancetta after it had cooked.

I’m posting the Caramel Topped Semolina Cake this week. Another unique Dorie treat! I made it, the roast chicken and the pumpkin flan all last weekend so I’m “ahead” for the month…I plan on doing the potato gratin tomorrow to serve with PW’s BBQ Meatballs. Dinner for a friend who is coming to help me organize my “barn”. I’ll be looking forward to December’s choices soon! Though I may have to do the chicken again before the month is over…just to see what happens to that lovely bread when you get the wine in on time!
