Potato + Leek Soup – I am in love!

    • Karin December 6, 2010 at 9:57 AM #

I have to say, it got two thumbs up from my family. Usually my potato soup is thicker so I was a tad weary about so much liquid, but ti was perfect. Used a potato masher instead of the mixer, so you still had some little pieces in the mouth. Will repeat this creation.

And, I have to say, it’s a lovely dish!

A few people have left feedback on my blog about a tip in dealing with the speculoos dough, and how they wished they knew before making them, so I am sharing it for those planning on making these delicious cookies.

this dough is VERY soft, so it can be a bit frustrating when working with it. My solution for this was instead of refrigerating the dough for three hours, I put it in the freeze it for about 1 1/2 hours, already rolled out and covered in cling wrap, as recommended by Dorie. Once the dough got hard, I cut the shapes, and they came right off. And because the dough was semi-frozen, they held their shape beautifully.
