It’s cold in Pittsburgh. The driveway is covered in snow and needs to be shoveled. I think this is the perfect day for soup!

    Another “beautiful” snowy morning in the North East. Wish I had a bowl of the soup when I came back in from shoveling a path to the garage this morning… (And I don’t even want to think about what I am going to have to do when I get home from work).

    Looking at everyone else’s links, it seems my “white” mushrooms were considerably darker, but still it was quiet tasty! I only had 8 ounces of mushrooms to start with so I didn’t save any back for the salad…this time. I look forward to making this more often and playing with it a bit more. Leftovers are scheduled for a one on one with some pasta later today!

    This soup was a surprise…the taste/flavors were not at all what I expected…even my non-eating mushroom children tried and liked this soup…it’s a winner!     Paris Mushroom Soup was a great pick for this week. It is healthy – no cream and just a little butter; and it’s quick – I made mine in about 30 minutes. Without the green onion on top, I do find it a bit bland, BUT, overall, I give it a thumbs up. With a crusty baguette and a crispy salad, it makes a nice healthy winter meal…..a welcome respite from the holiday season.

    Nana and I each had our own separate successes with this. She is a mushroom lover so it is not a surprise, while I on the otherhand was hesitant to even taste test my creation. Regardless of how great it smelled. So glad I did ! Lots of blog problems tonight so forgive the font inconsistencies- will hope our site is more cooperative tomorrow.

    This was such a marvelously simple recipe, great for a quick meal. A nice red wine, a loaf of bread and a simple romaine salad completed the repast.     I just joined the group so this was my first recipe. I made the Paris Mushroom Soup yesterday evening after a full day of shopping. It is an easy recipe with few ingredients, a lovely aroma from the very start and richness without cream. I cut the recipe in half as there was just the two of us and served it with a simple salad of baby greens and toasted French baguette. My Braun immersion blender had no problem pureeing the soup. Sorry that my pictures are found on my Flicker account as I don’t have a blog. This soup is definitely a keeper.

    Having made only half of the recipe last night, I had one serving left today for lunch. The oven is on a self clean cycle for three hours so I tasted the soup cold. It is just as yummy cold as hot.

      The heat needs to be on high or medium high, and the cooking pan needs to be large enough so that the ingredients don’t “boil,” but have enough space to get sauted

    Very pleased with the soup. So easy and LIGHT! Just two tablespoons of butter in it? I had too much onion, however, and they overshadowed the mushroom flavor a bit. DH didn’t think so. I have an issue with recipes that stipulate “one large” or “one medium” as size of vegetables and fruit vary significantly. I always appreciate a quantity reference as in, “about 1 1/2 cups.” The same with baking measurements; I really need not just volume but weight measures to get accurate results.

    I found this easy and very delightful – although for leftovers, I precooked mushrooms by frying in butter and then adding to soup reheating on stove. We preferred this to the uncooked mushroom salad method of serving.

      Also, I added lemon juice at the end to balance out the flavors and it really did make a world of difference. Strongly recommended.

    I made this 2 weeks ago to share with my friends at the office and it was loved. I did add 1/3 cup of sherry & only 4 cups of chicken broth. It was rustic and chunky and amazing! Perfect for this January weather. I didn’t blend mine & I used creminis – Wonderful!!!
