Made this for dinner tonight – yum!
Does anyone know why Dorie has you remove the germ from the garlic? Sometimes I do this and sometimes I’m lazy and don’t.
A lot of people think it makes the garlic taste more bitter. I don’t mind the slight bitterness, though, if I notice it at all, so I don’t degerm my garlic.
That is actually answered in one of the side notes in the book (somwhere.) It’s because of the bitterness factor. However, w/ younger/fresher garlic I don’t believe it’s as much of an issue.
Does “not being able to take a good photo of the dish” count as a problem? LOL. Having the HARDEST time. Made this 3 times, each time no dice for the pic.

Of course! I think many of us struggle with taking “good” photos of our dishes. I think what has helped me tremendously is taking the photos while there is good, natural day light. Too, using neutral dishes, so that the food does not compete with pattern, etc on your dishes.
I normally don’t have an issue with Dorie’s dishes but this broccoli just isn’t pretty ;-) Need to rethink how I am styling it.

Loved it!!! This entire household, apart from me, is not a fan of broccoli… then came Dorie’s version…. and they loved it!
This broccoli was a hit! So easy to prepare, and full of flavor. I loved it.
