Pink and green by way of pistachio and strawberries. Can it get more spring-like?
Link will be active after midnight eastern time.

So beautiful! And I love that flavor combo too! Oranges would also be amazing with the pistachio pastry cream…
My link will be live on Saturday as I have this month’s Charcutepalooza post going up tomorrow. I LOVED this week and it was the featured dessert in an all Dorie dinner. I will post link when live!
We had our eclairs three, mixed ways! It’s been Friday for a few hours already where I am, so here’s the link:

I can be in the mood for eclairs every day of the week. Fun to make and awesome to eat.

My eclairs were a complete failure…but the photos make them look not quite as bad as they turned out. However, they were delicious, if not pretty!
http://jumpingoffthecliff-sirey.blogspot.com/2011/04/french-fridays-with-dorie-vanilla.html
Couldn’t stop eating them! Can’t wait to see everyone’s eclairs!

Making the vanilla pastry cream was a fun experience, but I’ll probably stick to whipped cream next time.

The baking times did not work for me. It only took me a few batches of pastry dough to figure that out! But in the end – success.

My fellow beekeepers-in-training and I la-la-LOVED these puffy, creamy, luscious bits of goodness!

I love the word fiddly you used. I enjoyed your post very much!
Vanilla eclairs here-both traditional and deconstructed….yum.
http://popsiclesandsandyfeet.blogspot.com/2011/04/french-fridays-with-dorie-vanilla.html
LOVE your idea of deconstructed- very cool!
Loved by everyone! Made the coffee flavored pastry cream. People at work thought that made them a good choice for breakfast!

We loved these!

I can’t wait to see what everyone came up with for this one! I enjoyed making these but was disappointed by my photos :-(

I’m so late for work! I got carried away writing this post… but all with good reason. I do have question/call for suggestions for you all on what to do with leftover, underbaked pastry tubes.

Have a great Friday!
Mine: http://fakeginger.com/?p=1602
We had a few problems early-on (pastry cream fail) but in the end, they came out great. We made ours with a touch of Grand Marnier in the cream and chocolate ganache on top.

These were tasty and fun to make, but not my favorite pastry.

http://inpursuitofhobby.blogspot.com/2011/04/ffwd-eclairs.html
Loved making these…although I’ve made profiteroles often I have never made eclairs! Delicious!
http://foodlibrarian.blogspot.com/2011/04/worldcat-chocolate-eclairs-national.html
I filled mine with chocolate pastry cream and topped with vanilla bean glaze. I’m also having giveaways this week to celebrate the end of National Library Week! :)
Hello Doristas! I couldn’t join in the eclair fun this week as I was away on business. What a week to miss! Can’t wait to see your creations! Do drop by for a Cuban…sandwich if you have time.
Helllooooo! I went for a classic combo of vanilla with chocolate ganache glaze. These sure were tasty (dangerously so). You can see my post on the new, improved and moved over to WP PheMOMenon.com!! I finally made the switch and would love to hear what you think :)

These were so good filled with chocolate pastry cream and covered with the thick ganache.

I love Dorie’s recipes, especially this one. I have had some not so great success with Pate a Choux in the past, yet this one was a breeze. It is truly amazing how intimidating something like this appears, when in reality it is really so super simple. It is such an accomplishment!

Welcome and your eclair photo looks really good!
I made a lemon version of these for my husband’s borthday! Love them! They’ve all been eaten :)
http://findingfrenchie.blogspot.com/
I made chocolate-topped eclairs…
http://cookingluciacara.blogspot.com/2011/04/chocolate-eclairs.html
I absolutely love the process of cooking, even if it takes a while with interruptions! I even love it when they are gone in 10 seconds by ravenous children coming home from school! Thanks Dorie. I love learning something new!

An imperfect, though tasty, experiment:
http://aplatefulofhappiness.wordpress.com/2011/04/15/french-fridays-with-dorie-eclairs/
These were great – I made the double chocolate variation =)

My biggest fear turned in to my biggest and tastiest moment of success! http://www.stephsbitebybite.com/?p=1808
I was a bit nervous, but it turned out just perfect. Thank you Dorie!

Boy, it’s been a long week! But the verdict is in….
Espresso-Frangelico Eclairs go wonderfully with Champagne at 10:00 a.m.!
http://newfinmysoup.blogspot.com/2011/04/french-fridays-with-dorie-champagne-and.html
Pretty tasty…my kiddos ate two each, and half were gone before dinner even started. I’m thinking I might just make another batch and flavor the pastry cream with green tea…
http://heathercellini.com/blog/archives/2011/04/15/back-again/
Tried to leave a comment on your blog but couldn’t. Your eclairs seemed very scrumptious…do make the green tea pastry cream next, I did and it’s delicious!
Cinnamon pastry cream and ground ginger in the glaze for my version:
http://onewetfoot.wordpress.com/2011/04/15/ffwd-eclairs/
I had NO time this week to prepare more than our regular meals and Vanilla Eclairs don’t fit into that classification. :) However, I’ve made Cream Puffs for years and used that as my substitute post.

I missed the last two but there was no way I’d miss Vanilla Eclairs!
