We had our eclairs three, mixed ways! It’s been Friday for a few hours already where I am, so here’s the link:
i confess, i ate the vanilla pastry filling by the spoonful! these were delicious!
I can be in the mood for eclairs every day of the week. Fun to make and awesome to eat.
My eclairs were a complete failure…but the photos make them look not quite as bad as they turned out. However, they were delicious, if not pretty!
Couldn’t stop eating them! Can’t wait to see everyone’s eclairs!
Making the vanilla pastry cream was a fun experience, but I’ll probably stick to whipped cream next time.
The baking times did not work for me. It only took me a few batches of pastry dough to figure that out! But in the end – success.
My fellow beekeepers-in-training and I la-la-LOVED these puffy, creamy, luscious bits of goodness!

We had a few problems early-on (pastry cream fail) but in the end, they came out great. We made ours with a touch of Grand Marnier in the cream and chocolate ganache on top.
These were tasty and fun to make, but not my favorite pastry.
Thank goodness for teamwork….both in making and eating this one !!

Loved making these…although I’ve made profiteroles often I have never made eclairs! Delicious!
I filled mine with chocolate pastry cream and topped with vanilla bean glaze. I’m also having giveaways this week to celebrate the end of National Library Week! :)

I love Dorie’s recipes, especially this one. I have had some not so great success with Pate a Choux in the past, yet this one was a breeze. It is truly amazing how intimidating something like this appears, when in reality it is really so super simple. It is such an accomplishment!

I made chocolate-topped eclairs…
I absolutely love the process of cooking, even if it takes a while with interruptions! I even love it when they are gone in 10 seconds by ravenous children coming home from school! Thanks Dorie. I love learning something new!

Espresso-Frangelico Eclairs go wonderfully with Champagne at 10:00 a.m.!
Pretty tasty…my kiddos ate two each, and half were gone before dinner even started. I’m thinking I might just make another batch and flavor the pastry cream with green tea…

I had NO time this week to prepare more than our regular meals and Vanilla Eclairs don’t fit into that classification. :) However, I’ve made Cream Puffs for years and used that as my substitute post.
I missed the last two but there was no way I’d miss Vanilla Eclairs!
