These were so good! I used them in eggplant caviar and couscous. I need to make more!
Wanted to make them over the weekend … wound up making them late last night, developing my own take on Dorie’s method
they were incredibly FAB with pasta, a little oil and balsamic and a sprinkling of Parmesan.
planning on doing this again and making some roasted tomato SOUP and putting it in the freezer to get me through the long, tomato-free winter months.

I agree wholeheartedly – pretty fantastic (and, simple). My Sicilian neighbors do sun-dried tomatoes (delicious) in the old European-style (merci to the Las Vegas sun) and Dorie’s Tomates Confites are almost as good. Using them for eating, for a dinner party centerpiece and for gift-gifting. I’m hooked.

I am glad that I was not frightened by the long and slow roasting time. I would have missed a wonderful tomates confites :) I served it as a side for my dijon mustard pork chop :)
We tossed them with pasta and Smoked Mozzarella – lovely recipe!

Turned the tomates to a panzanella bread salad in lieu of fresh. Incredibly good!

We had posted, before the August recipe list came out, on our site our version of roasted tomatoes & dishes we make with them. It has always been a go to recipe of ours ! Have to check out Dorie’s. Hope you enjoy it.

After two months I have returned with one of the easiest and yummiest recipes out there. Missed catching up on everyone’s posts and thoughts.
