Yes, it was pretty tasty! Baba Ghanoush still has a slight edge, though.

I got a little extra inspiration on how to serve this. All of us enjoyed it so much!

I confess to my food hang ups in this week’s recipe:

What is it with the capers? I debated with my other half and won out on trying it the first time with capers – but only because the recipe called for it,and I felt that the purpose of French Fridays was to try it exactly how the recipe described.

I like anything that can make me eat an entire eggplant in one sitting.

  8. mardi@eatlivetravelwrite August 19, 2011 at 10:47 AM #

    Loved this!

  9. Maya August 19, 2011 at 11:26 AM #

I love anything to do with eggplant, so this recipe was a clear winner for me from the word ‘Go’!

    • rosa August 19, 2011 at 12:02 PM #

Me too! I was afraid I would be the only one but I love eggplant.

  10. Pachecopatty August 19, 2011 at 11:46 AM #

I peeled and sliced my eggplant before roasting (unclear on the concept-helps to read the recipe) and layered it into a salad;-)

110 Degrees in Las Vegas/Henderson and a 400 Degree oven?!? Do I get extra-credit, gold stars, Chef’s hat, anything?????

I liked the Eggplant Caviar, especially as a spread. I also roasted peppers yesterday and used both items to make a sandwich, as Dorie had suggested. Delicious. Now, on to hamburgers next week!

I agree. Phoenix is 112 so I think we should be making ice cream…but this is a healthy and easy recipe…a new way to get my vegetables, which, believe it or not, when all my kids moved away and I’m are not making sure they get their veges, I find myself moving on to brownies.

Oven malfunction so didn’t get to the eggplant caviar yet – so i’ve posted on last week’s salmon in a jar instead!

  22. lizzydo August 19, 2011 at 7:25 PM #

Nice dip…but needed a bit more zip :)

  23. Confessions of a Culinadry Diva August 19, 2011 at 7:25 PM #

This was an amazing dish and perfect for our summers in Palm Springs! Cannot wait to make it again.

  24. tricia August 19, 2011 at 9:37 PM #

I knocked this out at the last minute while Nana will be up to bat next week. Not sure that I made this one correctly (rushed) so I am looking forward to reading through everyone else’s posts and seeing what I can do differently next time.

I am a big fan of roasting and eggplant, so I will be revisiting this one. But not when it is 90 degrees and my oven has to be on at 400 for 45 minutes :)

In light of my severe spring clean, I feel like chanting like my 2 year old nephew “I did it! I did it!” But I totally didn’t.

  26. onewetfoot August 20, 2011 at 3:02 AM #

I liked this one a lot!

  27. ElinChia August 20, 2011 at 4:36 AM #

Thank God I did not give this a miss…it was the most delightful dip/spread for the sopes I made :) Happy Friday to all :)

  28. gaaarp August 20, 2011 at 11:18 PM #

This was especially good with the slow-roasted tomatoes!

  29. luciacara August 21, 2011 at 10:14 AM #

This is a gussied-up version of one of our favorite recipes…we loved it!

Sorry for the lateness…lazy days of summer and all…

  30. ApronThyme August 21, 2011 at 6:56 PM #

I’m a little late, so happy weekend! Was prepared not to love this one, but am pleasantly surprised. I see we have a lot of eggplant lovers here!

  31. Katya August 22, 2011 at 1:16 PM #

Was there eggplant in there? I must have tripled the garlic.
