What is it with the capers? I debated with my other half and won out on trying it the first time with capers – but only because the recipe called for it,and I felt that the purpose of French Fridays was to try it exactly how the recipe described.
I like anything that can make me eat an entire eggplant in one sitting.

I liked the Eggplant Caviar, especially as a spread. I also roasted peppers yesterday and used both items to make a sandwich, as Dorie had suggested. Delicious. Now, on to hamburgers next week!

I agree. Phoenix is 112 so I think we should be making ice cream…but this is a healthy and easy recipe…a new way to get my vegetables, which, believe it or not, when all my kids moved away and I’m are not making sure they get their veges, I find myself moving on to brownies.

I knocked this out at the last minute while Nana will be up to bat next week. Not sure that I made this one correctly (rushed) so I am looking forward to reading through everyone else’s posts and seeing what I can do differently next time.
I am a big fan of roasting and eggplant, so I will be revisiting this one. But not when it is 90 degrees and my oven has to be on at 400 for 45 minutes :)
