    We loved the no stir method! Double hit! We served this tasty side with roasted herb de provence chicken & roasted thyme fish that we included.

    Well, technically there is no rice in my rice dish. So, one big tweak, and few smaller ones. We enjoyed the flavors.

      I am so sorry to hear that the flooding is continuing in your area, hopefully the weather gets better soon. I really don’t think the North East can take much more. Despite everything it is pretty impressive that you were able to get this week’s dish on the table, now THAT’s dedication!

      Tammy – your rice looks great. For some reason, typepad is not liking me today and I couldn’t comment on your blog so here’s my comments: oooh, with flank steak. Excellent. Did you use anything on the flank steak besides salt and pepper? The two dishes look great together.

    I’m thinking of making this mexican-style by replacing the spinach with cilantro and the cheese with a mexican blend to go with home-made carnitas tonight. Any opinion on how this would work out??

    Unfortunately, I was also unable to make this rice. Southern CA/parts of Arizona experienced a massive power black out from 3:30 p.m. to almost midnight last night, so it was a bit hectic.
